Calcium Oxide and water for about 3 hours. Too bad it doesn't work on coal. :-)

LOL if that worked on coal I wouldn't tell anyone!

Modernist cuisine has a recipe that uses calcium hydroxide aka pickling lime. Calcium oxide would scare me.

I was uncertain the first time as well (for a,different dish). So I looked it up and it is calcium oxide. I also reached out to the,Mugaritz team and they confirmed it. It can be unfriendly if not used properly but if used properly (which is easy) there are some amazing results. I made some pear stones with it yesterday and the feedback was phenominal.
