Absolutely, please share.... i think I can cook it but, after a bottle or two it might be hard to plate like that.

Halibut:
1. Peel and VERY thinly slice fingerling (or small) potatoes.
2. Layer on fish like fish scales.
3. Wrap firmly in plastic wrap and let set in fridge.
Porcini Broth:
1. Hydrate dried porcini mushrooms by pouring boiling water over them. Steep in a bowl for 20-30 mins. Strain. Reserve liquid.
2. Sweat brunoised shallots and garlic in EVOO and butter.
3. Add sliced Cremini mushrooms. Cook gently till moisture evaporates.
4. deglaze with white wine. Reduce to nothing.
5. Add Chicken stock and reduce by 3/4.
6. Add Reserved Mushroom stock. Reduce gently.
7. Add fresh thyme. Strain.
Broccolini
1. Blanch and Shock.
2. reserve on paper towels wrapped in fridge.
Corn:
1. standing the corn vertically on a cutting board slice the kernels off.
2. Reserve.
Chanterelles:
1. brush detritus off.
2. Reserve on towel lined tray.
To Finish:
1. Saute Corn in butter. Add Broccolini to warm. Season.
2. Heat another pan till hot. Add a small to moderate amount of veg oil then add Chanterelles. Saute. When liquid is released and browned add butter, shallots, and garlic and thyme. remove from heat.
3. Meanwhile Heat another pan. Add Veg Oil. Add Halibut potato side down and reduce heat to Medium. Pan fry for 1-2 min (this is tricky! took me two tries and still didn't get it perfect.). Carefully flip fish,, add butter and thyme and baste till done.
4. Place some sauteed spinach on the plate, spoon some corn over top, arrange veg around, place fish ontop and pour sauce. (Raw enoki ontop)
