My recent posts have all been from the last week, but this one is a blast from the past. I'm going to bring this one back.
Salmon eggs marinated in dashi, shoyu and sake, topped with sliced shiso leaf.

Easier said than done. There is a careful process of defrosting the salmon eggs with a brine, several ice cold fresh water rinses including the removal of the popped ones, and then rinsing and marinating in the dashi jiru. It's well worth the effort though, because it's a completely different thing than the salmon eggs that come salted in a jar.
