Remove the legs (for confit); chop off the wing tips, remove the back half of the back bone leaving the crown for roasting. Remember to remove the wishbone too. Easier to carve after it's roasted.

So funny, my wish came true but not in the way I expected. Nick's Peking duck recipe was a bit much for this home cook. Air compressor... wha? Made for a very cool video.
