Good recipe for venison?

My friend hunter a deer and is sending me some venison fillets. I was wondering if anyone had a good recipe? I was planning cooking them sous vide and searing with my torch. After doing a little research, a red wine pomegranate sauce looks good, but if anyone has anything better and an exact recipe I would greatly appreciate it.

There is a restaurant in Sydney, Australia called Marque, they have a recipe for Venison, Beetroot, Cacao & Vanilla which is very amazing. Try and get your hands on the book and try that recipe out!

What cut? Is it the actual filet? If so, don't need to cook it much (e.g. SV 55C). Goes well with roots, fennel, cherrys and some grains.

This is a venison chop I did with the ChefSteps butternut squash puree recipe. I am fond of the squash because its sweetness helps mute some of the gamey flavor from venison. Since venison is incredibly lean, I like to use mushrooms sautéed in butter or crumbled bacon to add some fat. A little bit of pickled anything also goes along way to bring all of those flavors together. Good luck!

I enjoy it with a traditional cumberland sauce. Have used with deer, moose and caribou. Find SV perfect for venison to get perfectly medium rare without drying the meat.
