A long time ago, I remembered reading a recipe using lamb and crab. Today, I decided to give it a go and I was very happy with the results. I seared off the chops, split them and stuffed with a crab cake mixture. Because my taste buds said so, I seasoned with the left over rub I had from the
smokeless brisket. Though it is not in the picture, I made the hollandaise foam from CS'
whipping siphons class. (I got a lot of good traction from that class). This tasted really, really good.
