Chefsteps' Yeasted Waffles 2.0

Whipping the egg whites with 50g sugar and adding an extra gram of yeast, along with not 'punching' the batter down yields 100% hollow waffles with the crispiest texture ever. 5th day in a row doing these, they're insane!

It's the original Chefsteps recipe but you separate the egg whites, whip them with 50g sugar and add an extra gram of yeast to the dry ingredients!

And don't whip the batter after it's done fermenting!

For better results: Add +100g flour, reduce 100g milk to ease the process of folding the meringue into the batter.
