I wanted to test out various brands of sweetened condensed milk to make dulce de leche. I used my SV immersion circulation set at 185 F and placed three unopened cans inside for 14 hours (Generic store brand, Eagle Brand and Nestle (La Lechera). The generic store brand was grainy (I threw it out), the Eagle Brand was slightly darker with nice dark caramel notes (the one on the left) and my favorite was the Nestle La lechera (the one on the right). The Nestle La Lachera is thicker and creamier and has a great mouth feel. I don't know if there is a difference between Nestle Sweetened Condensed Milk and the Nestle La Lechera, next time I see the Nestle Sweetened Condensed Milk I will try it.
I think I will fill some macrons with it.
