Grilling Turkey

I been grilling the Thanksgiving Day turkey for many many years. I take the bird off the grill when the bird reaches about 155 160 wrap a towel around it on put it in a cooler always comes out moist.I was told to turn the bird breast side down when you let it rest it would be juicier.Is this true.

Intuitively that makes some sense. I've always started the turkey in the oven breast side down and flipped it over halfway through ... Try it and share your results.

If the breast is down in a non-convection over (during cooking ot during rest) it is protected from the direct heat and thus, may retain juices longer (in theory). I was asked this question here (we take turns) as the results have been inconsistent when they tried this. There is a misconception of smoe sort of magical piping from the surface to the inner bird.

I'm just shocked that a turkey taken off the heat at 155-160 could still be juicy. That would mean a final temp of 170+. Take it off the heat around 145. it will rise to 155+ and spend enough time at that temp to pasteurize.
