Molecular starter kit?

Hi guys,

Enthousiastic home cook here. I found a website in the Netherlands where you can buy small amounts of the El Buli Texturas goodies. I was thinking of buying 4, or 5, or ok 6.

On my ' want' list:

Lecite

Algin

Calcic

Xantana

Anything I should definitely add? Or skip?

Agar and Gellan (they may call it Gelly) would be high on my list. Iota and/or kappa and Metil. See if they sell other brands ans there are other fun things I believe Adria may not make (I could be wrong).

The three 'Sphere Magic' kits (Creative, Enthusiast, Professional) were created in conjunction with ChefSteps a couple years ago when they debuted the spherification class. (I got the Enthusiast kit)

I've since sort of piecemealed together my pantry, but I more or less have everything in the $200 Ultimate kit.

Agar can be bought in most biological food stores here, so no need to order it online. Unless it differs from 'normal' agar? I'll check out the lota, kappa and metil, thanks!
