Pork steak (shoulder) finished on the grill. Served over quinoa with black forest poached kale and steamed carrots finished with pistachio and pear dressing.
Playing with desert, one bite pumpkin pie. Pumpkin cube fossilized and poached in a seasoned syrup and served topped with vanilla cream. The inside of he cube.....a puree, the outside a crisp texture. An experient that went well. now need to work on presentation.
