Pickle "Shelf Life"

I pickled some baby carrots and some ramps, and they have both been in the refrigerator for ~2 weeks. Once I open the jar and start eating them, does anyone know how long I have until they go bad?

If they are properly pickled, a pH below 4.3 all the way through the vegetable, and you keep them refrigerated and don't contaminate the jar by sticking hands into it constantly, then a shelf life over a year is not unreasonable.

I've pulled pickled stuff from the back of the fridge that has been there for over a year. The texture gets a bit soft, but the salt and vinegar ensure nothing bad will grow.

What do you mean bad? They may lose some crunch but should otherwise be safe to eat for a long time. The vinegar should keep anything from growing, so as long as they taste good, I'd say go for it.
