pickled mustard seeds
Rick_C_4825
I prepared a batch of the pickled mustard seeds and there doesn't seem to be very much mustard flavor. My assumption was that they would have a fairly pronounced mustard flavor with the texture close caviar. My batch however is pretty bland. My question is whether my expectations were off or perhaps my mustard seeds had lost some of their potency (I don't recall exactly how long ago I bought them but they were likely a couple of years old). I have a new supply on their way from the Spice House but was hoping to maybe get feedback from some of the members who have made this recipe.

@BrandonLee
thanks, that was my initial assumption and should receive a new batch and I'll give it another try. Is it your thought that they should have a fairly pronounced mustard flavor?

Thanks - my question was prompted because I seemed to have more of a sweet vinegar flavor rather than that of mustard. Having no frame of reference as to the flavor trying to be achieved I thought I would ask for input from others who have made them. I'm going to make another batch with fresh mustard seeds - may also try with a combination of yellow and brown seeds.
