as a follow up to @John Fisher post last week and using the American Eagle product a time comparison....using an electric (Cusinart) pressure cooker :

42 minutes on the left........50 minutes on the right

The flavor profile was as different as the color with the lighter one more of a "caramel candy" flavor and the darker one more intense and "nuttier". Both were left under pressure until they cooled down naturally...only 8 minutes difference

Nice comparison! I've always wanted to make it but haven't found the occasion... maybe this post will serve as inspiration! I wonder how much difference the pressure ratings on electric pressure cookers (which tend to be lower) change the timing compared to a traditional 15PSI rated stovetop PC.

@HammeredChef I have made this three different methods now. PC at 15 psi is definitely the quickest, 30 minutes. Simmering in a water bath on a burner 4 hours. And SV 185° for 12 hours. The results are about the same. I did find a recipe where you open the cans and add a little vanilla and a pinch of salt and cook in a mason jar. I haven't tried that yet, but it's on my radar.
