did a great looking low temp squid at 65C the other day, I'm sure he'll share the time he used with you.
To my knowledge, tender meat like squid hoods can be cooked at 65C for 5 mins for a firm texture, or for 3-4 hours at 65C for a more braised texture. For tougher meat like octopus tentacles, to tenderise I've seen recommendations from 77C for 5hours to 80C for three hours.

Thankss! I ended up at 65C for 4 hours. Toothsome but reaaally tender.
