Was asked to cook Xmas dinner and of course they want Turkey. Will have to take a fair bit with me so will be packing allot in Dry Ice (including the cooked Turkey-in parts) for the drive to Canada.
Bought a couple extra legs, used a salt/sugar/spice cure (similar to Heston's powdered goose and Alinea's goose) cured 24hrs, cooked 24, smoked over maple ships and chopped. this will be used in the stuffing. This is freaking delicious BTW! Saved the skin on parchment and vac sealed flat as these will be used in the base/bottom of the pan for the stuffing. Also made trukey stock (from left over thanksgiving scraps and extra Turkey wings) and made a Tortilla soup that I will clarify via muslin and plain that I might clarify for aroma (neither shown). I might not like Turkey (I find it a bit boring) but thought I would play a little.
