Liquid vs Powdered Soy Lecithin
Tim_230841
I only have powdered soy lecithin. What are the rations to substitute or can I make liquid lecithin with the powder?

Thank you! I already read both these posts, but I still dont understand how they are different, if the powdered form is just "de-oiled". Is it not possible to bring it back to its original, "oiled" form? And if yes, how do I do that?

you just said how they are different "if the powdered form is just "de-oiled." Removing oils from a substance isn't particularly easy to do, and often involves a long and somewhat unpleasant chemical extraction. Once removed, it's even more difficult to put back in. Try taking skim milk powder and adding butter to attempt to make whole milk again. Just not quite the same anymore. I recall seeing somewhere that the powdered is 10 percent fat, vs. the liquid 20, so you might try to add an extra 10 percent of the weight to the soy lecithin, but you would first need to get your hands on the oil that is extracted from the soy lecithin, or an oil with the same chemical properties. Then, once you've done this, you're going to have to come up with some type of emulsion process.

I didnt think about that. Thank you for the info! I guess I just have to get the liquid form.
