Hi there
I have for the second time made the Heinz style ketchup. Great recipe. This time though it turned out a little to fluid. Any advice on how I could thicken it?

Blend in more tomato paste or a small amount of xanthan gum.

Sorry that I couldn't add something meaningful to answer your question. But a couple of days ago I opened a thread because I didn't know what kind of tomato paste (single, double or triple concentrated) I should use. Perhaps you can tell me what kind of tomato paste you've used.

why don't you try single concentrated first and see if you like the flavor. If there is not enough tomato flavor move up to double concentrated. Grüße

, I am half german, living in Denmark. So I thinbk I know what you arte asking for. I have just used the canned tomato paste you can buy in the stores. The one I have used has about 14% concentration and works well.

, I have tried to mix in more Xanthan, but I do not think that it has thickend any more. So I maybe need to use some more. Adding tomato paste could be an option, but then the taste will also alter, but it might be woth tinkering with.

: Sry for my late reply and tank you for your help. After an short email chefsteps told me that they are using 'Hunt's Tomato Paste' but they couldn't provide me informations about the concentration.
By checking out some more american brands, wikipedia and so on I found out (perhaps it is just my impression) that if no concentration is mention on the packaging it mostly means single concentrated. So in case of Hunt's Tomato Paste (and my theory) it should be single concentrated.
