58C, pre-seared, bagged with some liquid smoke, garlic & butter and quickly re-seared before serving. Served with caramelized carrots, broccoli, mushrooms and a quick pan sauce with the juices from the veggies, the meat, butter and some red wine.
Took some inspiration from the tenderloin video as something very quick to pull together for a great dinner! Too full to write more, I'll go for a post-dinner full belly nap!
