This represents tossing the fridge and applying whatever came to mind. What you have here is pureed cod that I put into the iSi to make a mousse. Then I took some home made kimchi and built a salad adding some strawberries and salted capers. I made some clarified butter and amped it with vanilla and palm sugar which I used to poach a lobster tail. I chopped the meat up and added it to the mix. The colors looked inviting and it had a lot of neat flavors.
