So I hooked up with a grower who sells these badboys and other varieties

at a ridiculous price. Dude has a hugeeee warehouse full of these. 2€ per KG. Deal of the year. These usually retail at 1.60€ per 250g.

Time to conjure up some dishes for these!

See the mushroom stock posted by Clay (easy as well as tasty). Consider purees, marmalades, roasted, etc etc. Makes great mushroom butters for finishing dishes (frozen in cubes).

I've used it as a base for leek and potato soup and sauces. It is killer. There is supposed to be some kind of "latte" based on it, like a consomme. I used some of the mushroom from making the stock (with the stock) for a risotto that was wonderful

I love the Modernist Cuisine at Home pressure cooked mushroom soup. I bought seven pounds of mushroom to have a reserve for the holidays!
