Hey all,
Have a question about the warm kobocha squash salad. I don't have a microwave; is there a way I can confit the squash sous vide and obtain the desired texture? Also, if I wanted to make and hold this and reheat at a later time, what's a quick way to do it without overcooking the squash? (Ie, I come home from work and want a salad but don't want to reheat sous vide for an hour or so.)
Also, any tips for the warm carrot salad without using a microwave?
