Have you ever heard about this term? this is the italian way to cook fish (or sometimes also vegetables and meat) marinated in vinegar after been fried.
Here I have used anchovies and a fish that in the south of Italy we call Pesce Bandiera (flag
fish, for its elongated shape). This was and experiment for Christmas
for 300 grams of fish:
after fried the fish (with in rice flour)-
prepare the marinate: 200ml vinegar, 200ml White wine , 70gr of raspberries (crushed with a fork) put on the fire, and reduce until 1/3 and filtered.
In a pan with 1 tbsp of oil 4 finely sliced shallots to slowly consume. Put the shallots and the marinate still warm on the fried fish. Then add for decoration other raspberries and some crunchy slices of radish (put in the ice) and serve.
