Just a few things from the holidays.
All Belly Porchetta: The first half was for a family dinner, this was the second, sliced up for sandwiches.
Pastrami: Finally got around to making the ChefSteps pastrami. So delicious. Also made for a family holiday dinner, but reserved a bit to make sandwiches back at home - like this kimchi reuben.


I wanted to play around with parsnips. Made a puree. Hollowed out an apple. Filled with caramelized onion and some thin sliced blanched celery, then topped with parsnip puree from the whipping siphon. Roasted everything in the oven until browned on top. Really delicious. Not sure why I plated the apple top. Would have looked better without it and the fried sage in the center.
Finally, made some gifts for friends and family. Included ChefSteps Malted Peanuts, Glassy Deep Fried Pecans, as well as some Rosemary cashews and smoked BBQ almonds.
