Non-Fat Milk Solids: Milk-solids-nonfat (MSNF) consists of the protein, carbohydrate (lactose) and ash (minerals) in a dairy product. The other two major components [of milk] are water and milkfat.
Sweet dairy whey: Sweet Dairy Whey is a by-product of cheese making. It may be used to replace part of the sugar in recipes. It tenderizes baked goods and imparts a slightly sweet flavor. Use in sweet yeast dough for a satiny delicate texture
Whey protein: Whey protein is a mixture of globular proteins isolated from whey, the liquid material created as a by-product of cheese production.
They are not interchangeable in and of themselves
