Today I said "fuck it" and went for this recipe. Obviously the stand mixer is a big part of it (bigger than I thought), but as Nick states in the video: even if you don't nail it, they're still reaaaaaaaally good.
I ended up kneading the whole thing with a wooden spoon for 1h30m, chilled and kneaded by hand again, rolled, cut and proofed. Did some Vanilla Butter Glaze, a Honey Glaze and some plain powdered sugar. I shall give this a retry when I get a stand mixer!
