Umami-bomb veggie demi-glace

I am thinking about making this in the next few days, but I need to substitute something for the eggplant (food allergy). Any suggestions? Or should I just increase the quantities of everything else?

zucchini and portobello mushrooms i think would benefit the demi-glace. there will be a different flavor, but pleasant none the less.

+1 for the Zucchini and portabello recommendations Brian made. Just depends on whee you want to head with the flavor. Deeper/earthier, the portabello, something more similar to original recipe, I would lean toward the Zucchini.

You could up the tomato paste portion too but i'd imagine it would make it a bit too saccharine
