Deep-Fried Carrot Skins

So I was peeling some carrots, about to throw all the skins into the bin when I questioned: what happens if I deep fry them? And so I did! Best garnish and anti-food waste option eveeeeer! Tossed in salt & msg, these are effin' great! Next time you're about to throw carrot skins in the trash: don't!

can also saute', caramelize and puree, or infuse cream for a custard......or make a stock...and btw-many stems (e.g. broccoli) can be used in similar ways

Carrot fries are better than sweet potato fries. Nothing wrong at all with fried carrots

Nice! I do this with potato peel but never thought to do it with carrot. I just have to be sure to wash them thoroughly.

Same, I thought since they aren't really starchy (are they?) it wouldn't work too well, but surprise surprise, it did! Btw I fried at 170C for a few seconds. They're all floppy when removed from the fryer but crisp up as soon as you lay 'em down.

Side note, try deep frying sliced shiitake mushrooms until crispy. Two words: VEGAN BACON

Shiitakes are pretty rare and expensive round here but I have oyster mushrooms all the time! Actually, I'll try this tomorrow!
