Ever get one of those ideas walkng through the store? As a fan of the slow roast and the poached pear on a cool evening, why not combine the two? Combined a spiced red wine and let the pear poach in the red wine at 275deg for 7 hours while the pear became compressed, it absorbed the jus. to finish, I slightly reduced the jus (didn't take much) and served with a tablespoon of gelato. I never knew a pear could taste so rich. Pics, 2hrs, 6 hrs, split served, served whole.
