Interesting Interview. Would have been nice to have better video, but in the voice of recent discussions of evolving.....In Spain, Miami and completly renovating Chicago. Say what you will, they seem to be continuously thinking and changing. Interesting how change to some restaurants are more conservative than others but change appears to be the new trend.
