Marrow Bones

I was gifted with some frozen marrow bones but I'm not really sure what to do with them. Any help would be great. Also, will being frozen impact the flavor? I'm a little worried that the high fat content will pick up freezer taste.

Stock would be my first choice! You should be okay freezing them.

Depending on animal, size of bones (and marrow), quality, etc, many things could be done. Stocks as Afonso mentioned, sauteed marrow served with one of many side dishes. Use them as a puree to richen a dish (like a risotto)....or make Bone marrow ice cream (can you tell I have a fat tooth?). Alternatively, send them to one of us. ;-) Let us know what you decide and share the results.

Are they inside of some container, air-tight wrap? I'm assuming they are beef thigh bones that are cut in half the long way (but pork works, too), so you can cook the marrow in the bone and eat it, scoop it out (when thawed) and use the marrow in a bordelaise sauce (and then use the bones for stock-roasted first), or make stock.

I like just roasting them. That rendered marrow is the world's best butter.

Are they cut in half length-wise? If so, roast them with some salt and pepper and serve with some crostinis or use the marrow in a sauce or whatever..,something beefy though and then get some good quality chilled vodka and used the now hollowed out bone as a luge.... basically a rich, beef slide you hold to your mouth and pour a shot down.... this makes for one hell of a decadent start to a boozy, over the top dinner party. You could also use the marrow to make a compound butter to use as a beefy topper for a steak.

I would suggest you following:
Lay the bones into a bowl of water and keep it in the fridge overnight. This will pull out some out of the marrow and makes it perfect:)
Then I would either go for roasted bone marrow as a starter or use it in the risotto and serve the risotto in the marrow.

1st carefully wrap the and vacuum pack. Place in a small styrofoam container with several ice packs, seal container carefully, all the way around. Address to Rob Parker/Hammered Chef and call FedEx to pick them up. This is the easiest way to deal with items like this....I will let you know if they were any good....

Fergus Henderson roasts marrow and makes a basic herb and shallot salad to accompany. roasted marrow on bread, salad on marrow, consume.

Oh, I get it previously frozen pretty often. Still tastes like heaven. Imagine a whole ribeye somehow reduced and shoved into a pat of butter. That's what it tastes like to me.

Thanks for the help guys! I think these bones are slated for risotto with roasted mushrooms.
