Diastatic vs Malted Milk powder

I use malted milk powder for the pancake recipe. Waffles call for diastatic malt powder. Are they interchangeable or no?

I think not but honestly I can't say why. This is a pretty FAQ around here! I do know diastatic malt provides better texture, a better crumb and improves rising time kn the dough. Malted Milk Powder would increase chewiness and maybe flavour a bit, but I think that's why. But hey, I can just be talking outta my ass, see what other people say.

this what kingarthur flour says about diastatic malt powder:

"active enzymes in diastatic malt help yeast grow fully and efficiently throughout the fermentation period, yielding a good, strong rise and great oven-spring. Add only a small amount, ½ to 1 teaspoon per 3 cups of flour. 1-pound package"

So I have to agree with Afonso and say that they are not interchangeable, since diastatic malt powder affects the yeast. I use it for bread baking only.

The diastatic enzyme helps break apart the sugars in the malt so they are more easily digested by the yeast (It's a big part of beer brewing) The malted milk powder would have the malt flavor but the sugars would be more difficult for the yeast to digest. Plus the yeast can't digest the lactose in the milk at all.

Agree with Tim, Jeff and Afonso. Non-diastatic malt is used mainly for flavour, whereas diastatic malt contains enzymes that help convert starches into sugars, which the yeast love. During the production of diastatic malt, the temperature is kept under about 60C when drying to prevent the enzymes dying.
