Can I substitute carboxymethyl cellulose for Methylcellulose F50?

chefsteps's chicken consomme of recipes is a great.But do you no problem with CMC when If Methylcellulose F50 not available?

Good question. The challenge lies in that cmc if I recall is excellent at retaining water. Generally we want to retain the collagenous/gelatin properties.
If you have the time, clarifying from frozen through muslin (see an example below) works well. Alternatively, try 1/2 with cmc to see how it works and have the frozen (or other) alternative available as a back up.

Thank you for good suggestion. I try whether it can use to substitute for gelatin.It makes a clear consomme.
