I was just browsing the posts and saw a take on Cassoulet. Looked good so i thought id share mine too.
In HK each year there is a French festival called French Gourmet that celebrates a different region of France each year. Last year was Midi-Pyrénées so we did a set menu that consisted of French bean & Foie gras salad, Cassoulet with Toulouse sausage and a Crema Catalana for dessert.
Great feedback but maybe a little heavy for the 30c weather we were having at the time.
