Local pork purveyor delivered our pork last week. Had the kids pick out the Hog, and the named it (Leader) because it led all the others in the field(s)-they rotate the hogs where it was being brought up-similar to Blue hills Farms. Not only did the kids express about how "Leader" tasted, but endgaged in many questions about where they took it after it left the farm etc. It will likely take a while to make any real connection, but was certainly proud of their attitude and their choice was delicious. The first cut of the lot (ham cut).....Served it based on what we did that afternoon as a walk in the woods with roasted vegetables and a pork sauce (my son's idea). He even cut the pork, so although not "clean" cuts it made me quite proud. For desert.....apple.......disintegrated poached apple on top of an eggless/dairy free apple custard with a nixtamilized granny smith apple, mini-caramel apples and a tsp of vanilla ice cream.
