Passion Fruit Sorbet

Hi guys! I want to make a passion fruit sorbet that has the same look and texture as the strawberry angostura one, I will be leaving out the bitters though. I will be using passion fuit puree, what do I have to adjust in the recipe and why. Thx

check your PF puree for sugar content (and how much) This will affect both taste and texture.

said, check the sugar content. Passion fruit on it's own has more than twice the sugar a strawberry has. The sugar content greatly affects the texture of the sorbet. As for the question you left at the recipe link, malic acid is naturally occuring in fruits such As berries and apples, shop it's a more natural tasting acid for the sorbet. You mentioned you're leaving out the bitters. Bitters have a high alcohol content. This affects the texture As well As the taste. You Will need to figure out something with regards to This: more sugar (which affects the taste), or a gum or other texture stabilizer. Good luck.
