I love making meatloaf SV sealed in loaf pans. My technique is to cook, chill, slice, and then sear slices in butter or tallow before serving. And I find a lower fat percentage beef is a good move for SV meatloaf too. 90% lean is a good starting point.

I liked the cooking result in the photo. But the chef in this diadem looks crazy. He had to buy harness lingerie to complete the look, they offer all sizes at MarieMur. I also expected to see some recipe in this thread. I would not mind cooking something similar. Where to find recipes that will definitely give good results? I do not want to waste my time and ingredients and get something uneatable.
