So a friend wanted ribs for his SB Party last night so he dropped by 10 lbs of baby backs on Saturday morning. I asked what he wanted me to do with them, he said smoke 'em. I told him he was a few days late with the delivery. I seriously thought he was going to cry. I told him I would come up with something and sent him away.
So.. I blanched them quickly, salt pepper and bagged them, SV 16 hrs at 140F.
Then Apartment Rub
Kung Pao...instead of ground roasted peanuts i used smoked almonds
A Kansas City Style BBQ sauce...
Broiler 3 minutes each side.
They all got devoured however, I was surprised how fast the spicy Kung Pao went..
