Apple ravioli-More playing

Had a few minutes to play and made apple cider ravioli with creme anglaise filling topped with maple syrup and sliced cheddar. A different way to serve apple pie. I've done it with carnitas, red pepper and goats cheese....lots of things. It's a nice way to present familiar flavors a slightly different way.

Are you using edible film? I thought they dissolve in water or non-fat liquids. I haven't had a chance to play film yet. I have seen a video (somewhere) that uses several layers of film instead of folding/sealing. Sorry I can't recall where I saw it but it may be a good choice for this type of dish.

Using agar (here). Adding some LBG adds some flexibility to it so it's not as fragile. It can actually be heated so can eat it warm (in this case, it would be warm apple pie flavor).
