WHAT ARE MINT CRYSTALS AND HOW DO YOU MAKE SUCH A THING?

They are recrystalized sugar and fresh mint. I haven't figured out how to make them yet. I bought them from molecularrecipes.com They are great. They are not like candy mint, they still have their leafiness taste to them. Pretty affordable also. Gonna try the other flavors they have soon.

Mmmm interesting. I imagine the process is like making rock candy with mint essence or whatever flavoring you want

That is what I was thinking also, but the crystal structure and size is much finer and uniform, plus the way rock candy is made would make mass producing this impossible.. My other thought was just candied mint, but again, getting the crystal size that small and uniform leads me to believe it was something else. I will definitely post the results of my tests when I get around to them (I still have a few ideas ahead of this to work on).
