Lemon meringue pie

I forgot how good a classic pie crust can be when done the annoying way. Also, I blind baked the crust with pennies, and I think it worked better than beans.

Looks tasty, may favourite dessert. Did you use Italian or French meringue?

Using diced frozen butter, cutting it into the flour with your hands, and using as little ice water as humanly possible so you have chunks of butter left in the dough, which is a gigantic pain in the ass to roll out. If done properly, it'll almost be like puff pastry when you bake it (which is why you need to poke a bunch of holes in it). If you look closely at the picture, you can see a ton of layers in that crust.

French. To me, the meringue part of a lemon meringue pie is meant to be super light and fluffy like only french meringue can be.
