Cod With Lentil & Squid Ink Puree, Charred Endive, House Ranch

Super, super tasty. I've never liked ranch before, but this homemade version is full of win. Also, I subbed out the raw shallots in the original recipe for the pickled baby reds I had on hand, because it's my kitchen, damnit, and that's what I do.
