How did you balance the milkfat with the foie fat? And is that balsamic?

What was the fat % in the end?
It seriously looks divine. I think the only way to step that up would be to add a seared piece of foie to the plate. I can't even imagine how good that would be.

Assuming foie gras is 45% fat, it came out to around 12% fat with the milk
I think the seared foie would have been awesome except it was already a very savoury ice cream with the amount of salt i used! Perhaps if i made it a sweeter foie ice cream, that seared foie slice would have been crazy delicious
At least to my tastes :O or maybe chunks of seared foie or somethign hahaha
