Nice idea.....I'm wrapping my head around how to get rid of the raw bite and keep the texture. Many things god with onions....but....hmmmm. Excellent project!

What serving a homemade french onion dip in it. I agree, maybe warming the petals ever so slightly in a thyme and garlic infused butter perhaps or frying them in as light as possible tempura batter... could also serve a very finely minced tartar in the cups. A nice quail egg in top - the crisp it of the onion might go alright with that.
