brown butter

i made some brown butter last week, and i passed it thru the unbleached coffee filters to remove any solids.
my guess would be that it can stay in fridge for few months without getting rancid? or should i keep this in freezer?

If you hot packed it, I would say it would last for quite a while in the fridge.

— You shouldn't have any bacterial concern. The water is entirely gone, so no bacteria, yeasts, or molds are going to grow in the butter. Overtime, the fats will undergo various oxidative reactions that change the flavor, but not necessarily in a bad way. When you don't like the flavor anymore, then it's time to throw it out. Until then, enjoy.

that was my plan too.
i made this with organic cream, and it alone cost me around $12. it wasn't cheap because from 500g of cream i got close to $120g of brown butter.
it's first time i ever made brown butter with cultured butter (cream with flora danica).
