Does anyone have a good edible soil recipe for both savoury and sweet dishes

I don't know exactly what you mean with edible soil, but tapioca maltodextrin can be used to make powders. It absorbs only fats though, so you must create a flavored fat or oil. When you have the powder you can mix other stuff into it like salt, nuts, herbs, whatever you prefer. I hope this helped a bit...

Savory mushrooms, quinoa, wild rice, olives (kalamata), herbs (e.g basil). Any of them ooked then dried and flavored as desired. Sweet, crystallized chocolate, buckwheat (will also work with savory), white chocolate, add flavored nut oil if you want it muddy.

I'm not sure how it would work in a sweet dish, but David Kinch has a "dirt" recipe in the Manresa cookbook. If you don't have it, you can "look inside" on Amazon. It's on page 65.

Here's one example from last xmas. Hestons dirt over tirimasu and I served it with an amaretto marscapone cheesecake xmas tree (mini tree in each pot). Many ways to do this and all very delicious.

Porcini Soil
INGREDIENTS
300g Flour
80g Confectioner Sugar
180g Dried Porcini, Ground
0.3g Salt
40g Butter, Softened
PROCEDURE
1. Sift together all ingredients except for butter.
2. Slowly fold in butter by hand, forming a dough.
3. Portion into 4 equal dough logs.
4. Freeze overnight or until frozen solid.
5. Using a manual cheese grater, grate logs on the finest side over a sheet tray covered in parchment.
6. Bake at 200°f for 20 minutes at 0% moisture, or until dry and crumbly.
