So I've cooked some pretty epic meals at work for my colleagues - we did an entire Turkey dinner for Thanksgiving complete with about 10 side dishes and 2 pies, follow up by a 70 day dry aged, prime-grade Prime Rib dinner for Christmas (cooked sousvide in a cooler by my desk then blow torched). But one of my favorites has been making waffles at work - that beautiful, buttery aroma saturates the entire floor and everyone not on my team looses all focus and just stares in a jealous intoxication. I have made many a friendemies.
The waffle irons will be heating up tomorrow morning and a few people requested easter themed waffles with mini eggs (FYI I am doing Chicken fried rabbit for easter lunch at work later this month). Chocolate eggs seemed to obvious though but it is get me thinking: Easter = Rabbit = Carrot = Carrot Cake. So I am going to do carrot cake waffles with whipped maple cream cheese and candied walnuts as the topping along with some of my homemade pecan wood smoked maple bourbon bacon that I just pulled from the freezer. I considered just pouring a carrot cake batter into the waffle iron but instead I am going to use a traditional belgium waffle batter seasoned with the ussual carrot cake spices bloomed in brown butter and fold in some pressure cooker carmolized shredded carrots and boubon soaked raisins.
And don't feel too bad for those who aren't being fed (we have about 500 people in the office vs 12 on my team), I just made arrangements to do a pig roast for the entire office this summer.
