Vegan Alternatives to Korean Buns

Suggestions for a vegan replacement of the milk powder in the buns? Do you think it is necessary to keep it to maintain that soft chewy consistency? Pre-Ordered Buns contain milk powder as well as Momofuku's recipe. Help.

If you leave out an ingredient, the finished product will be slightly different. There is a purpose to every ingredient in every recipe out there. As far as coming up with a replacement, do a Google search. There are a bunch of vegan baking websites out there, as well as vegan forums with many suggestions: almond milk, soy milk, and rice milk to name a few. Good luck.

Thanks. I went to culinary school and realize that changing the recipe will give a different final product. Instead of searching google I decided to come to Chef Steps as I felt that would be the most helpful . I was also told by the ChefSteps guys on their instagram that this was a great question and that I should ask it here. Obviously I can alter their recipe but the question was for David Chang's Momofuku bun recipe, specifically how can milk powder effect the product.
