hi, im looking for a way to add citrus flavor without adding acidity. for small batches i usually use citrus zest, but for a large batch that would 1) waste a lot of fruit 2) be a pain, taking a while to do. im guessing i could use essential oils for this, is that correct? just how potent are they compared to using zest? if i needed say, zest of 10 lemons, how much oil would i use, approx? a few drops? teaspoon?
