Toasted bao

Tried the bao bun recipe and it turned out good. I do need to learn how to roll it better.
Inside is beef neck braised in hoisin, sweet soy, stock, cracked pepper and anise.

That looks amazing. I looooove neck. I'm not sure if I've had beef neck, but lamb neck is spectacular.

It was. Lots of collagen still. It took 2.5 hours to braise. I'm going to make more tomorrow, as my nieces and nephew devoured them in minutes.

I'm not super well acquainted with cooking neck, but I think it's usually cooked a lot longer than 2.5 hours.

It was already fall off the bone tender, two hours in. I simmered it 15 mins. Longer. Pulled the meat, then reduced the braising liquid. I added back the meat, and let it simmer for 15 min.
